Seaweed-based food applications, particularly hybrid meat products, represent a pivotal opportunity within Europe’s protein transition. They address the urgent need for more sustainable and healthier diets by enabling the replacement of up to 50% of animal protein without compromising taste or texture, all while directly supporting EU policy priorities under the Green Deal and Farm to Fork strategy regarding environmental impact and food security. 

This roadmap sets out a practical and commercially grounded pathway for integrating cultivated seaweed into the mainstream European food market by 2050. By leveraging seaweed’s unique functional properties and addressing current cost and supply barriers, it defines clear production goals and market entry strategies to scale up fresh seaweed as a standard, high-impact ingredient for the food industry.
